Made with Pumpkin

During this fall season I kind of went crazy with pumpkin. I have tried making all the recipes with pumpkin- gnocchi, ravioli, etc. So it’s no surprise that I immediately signed up for a cooking class when I learned that a friend of mine was holding one and they would be using pumpkin in every way imaginable. I headed down on a calm Thursday evening to beautiful Bacoli where Martina and her family welcomed us into their home for some cooking fun. Martina and her mom had brought in pumpkins that were grown from their own garden and created all of the recipes (vegan) from scratch for our small group! The menu consisted of grilled pumpkin, pumpkin lasagna, pumpkin cream soup, pumpkin parmigiana, and pumpkin cake. And of course, some homemade wine. I went with a new friend and made some more. Amazing company, amazing views, amazing food. I don’t remember the last time I laughed so hard!

** This was also a particularly memorable night for me because it was the first time I had ever driven so far from base- 50 minutes-, in a bigger city, and by myself!! (If you know anything about driving in Italy, Naples in particular, this is a huge deal!) **

Our roots will forever be from here, America, born and raised. Yet, life requires us to move more frequently than we care to count.
